Honey Mustard Miso Marinade

This is a great marinade for fish. If you haven't used miso before, now is a good time to start. It is a salty, fermented paste made from grains and legumes. It works well as an oil substitute in marinades and salad dressings. Don't just add any salt or ingredients containing salt.

Ingredients
2 tablespoons Dijon mustard
1 tablespoon stone ground or whole grain mustard
1 tablespoon honey
1 tablespoon white miso
juice of one lemon
   

Instructions

Mix all ingredients in a glass or plastic container.

Coat all sides of fish. (Use on 1 pound Alaskan Salmon or Halibut or Tuna.)

Marinate 30 minutes to one hour in the refrigerator.
